Carob

The carob syrup is extracted from carob pods, which are long, thick and dark brown both outside and inside. The carob tree is widely grown in the Eastern Mediterranean countries. It is usually grown in poor, high altitude fields away from motorways. It takes at least 8 years for a carob tree to produce pods. It is a long-living tree which can reach a high of 5-10, or even 20 metres if allowed. Its leaves are dense and dark green. The carob pod is thick, with a leather-like skin and a thick powder-like yellowish flesh inside.
